Pottu Kadalai, also called Roasted Gram, Fried Gram, or Dalia, is a popular and protein-rich ingredient in South Indian kitchens. It is made by roasting chana dal (kadala paruppu) and is widely used in coconut chutneys, sundal, snack mixes, murukku, and laddu.
